Catering student Shannon secures employment just one day into her work placement at Manchester House restaurant

Hospitality and catering student Shannon Sampson is celebrating after securing work at award winning restaurant Manchester House – just one day into her work placement.

Shannon, who is studying professional cookery at Warrington & Vale Royal College, spent seven weeks working at the restaurant, owned by Michelin-star chef Aiden Byrne.

The former Culcheth High School pupil made such an impression that on her first day (after just five hours to be precise), she was offered a job by the restaurant’s head pastry chef. She is now working three days a week alongside her studies.

Shannon, from Leigh, said: “I am really enjoying it – it is incredible. It is all down to my tutor Scott and everything I have learned at the college. I definitely couldn’t have got this job without Warrington & Vale Royal College.

“I am getting to do everything to do with pastry including macaroons, meringues, ice cream, parfait and I am even getting to make my own chocolates – I am loving every minute of it.”

Scott Surtees, chef lecturer at the college, said: “To be offered a job just five hours into a work placement is an incredible achievement and is testament to Shannon’s dedication and passion for her craft. Shannon is an extremely talented young chef and is the latest of our students to go on an impress at Manchester House. To be able to secure work alongside a Michelin-star chef is something Shannon should feel extremely proud of.”

Scott added: “It also goes to show just how far we push our students at Warrington & Vale Royal College, ensuring that every young chef that enters our kitchens gain the skills they need for industry.”

100% of students at Warrington & Vale Royal College are given the opportunity to carry out work placements, with Shannon the latest to secure employment as a result.

Dominica Randolfi, Work Placement Co-ordinator, said: “It has been a real asset to Warrington & Vale Royal College to have the support and commitment from Aiden Byrne and his team. Not only has Aiden supported the college greatly over the years, he has also trusted in our students to produce dishes for his customers at both his Manchester House and Church Green restaurants.”
